Quesadilla with soy protein and Ssamjang

In this unique fusion dish, the traditional quesadilla is given a Korean twist. The quesadillas are filled with seasoned soy protein, which provides a meaty texture and is a great plant-based protein source. The addition of Ssamjang, a flavorful Korean condiment, infuses the filling with a rich, savory taste. The quesadillas are cooked until the tortillas are crispy and the cheese inside is melted and gooey. This combination of Mexican and Korean flavors creates a delicious and satisfying meal, perfect for a quick lunch or a casual dinner.

 

Directions

  • Soak soy protein with water or vegetables stock and season with garlic, salt and beetroot powder for about 20 minutes.
  • In a pan, pour oil and sauté onions.
  • Add soy protein mixture, walnut and garlic to the pan and cook for 3 minutes over medium heat.
  • Add ssamjang and season with salt.
  • Place the mixture and cheese on the tortilla and bake.
  • Serve with your favorite dipping sauce.

  • O’Food Mild Ssamjang 60 gr
  • Textured vegetable protein 100 gr
  • Walnut, chopped 50 gr
  • Warm water or vegetable stock water, the amount should be adjusted according to the cooking instruction on vegetable protein
  • Beetroot powder 0,4 gr
  • Onion, sliced 30 gr
  • Garlic, chopped 1 clove
  • Vegetable oil, 15 ml
  • Vegan cheese slices, 4 slices
  • Tortilla 2 pieces
  • Table salt to taste
