Gochujang vegan paella

This recipe reimagines the traditional Spanish paella with a Korean spin, using Gochujang to add a punch of flavor. The dish features a variety of vegetables and rice, cooked in a rich, smoky broth infused with the sweet and spicy notes of Gochujang. The result is a colorful and aromatic dish, where each ingredient contributes to a complex and harmonious flavor profile. This vegan paella is not only a feast for the taste buds but also a visual delight, making it a perfect dish for gatherings or a special family dinner.

 

Directions

  •  Soak the soy protein with warm water or hot vegetable broth for 20 minutes.
  • Sauté’ onion with olive oil for few minutes then add garlic and bell pepper cook for
    2 minutes.
  • Add soy protein and cook for another 3 minutes.
  • Mix turmeric powder with vegetable stock and pour all broth in the paella pan.
  • Bring to boil and add the rice, reduce heat and simmer for 15 minutes without stirring.
  • Stir in gochujang, green peas and leek, taste with salt and cook for another 5 minutes.
  • Sprinkle some lemon zest before serving.


    Tip:
      Add a pinch of Spanish smoked paprika

  • Granulated textured soy protein 60 gr
  • Warm water or hot vegetable broth to soak soy protein 120 ml
  • O’Food Gochujang Korean Chili Sauce 15 gr
  • Olive oil 15 ml
  • Onion, chopped 15 gr
  • Garlic, chopped 5 gr
  • Yellow and red bell pepper, sliced 80 gr
  • Bomba rice 200 gr
  • Salted hot vegetable broth 400 ml
  • Turmeric powder 1 pinch
  • Leek, sliced 30 gr
  • Green peas 50 gr
  • Lemon zest a pinch
