Tofu kebab with sweet chili sauce and couscous salad

Enjoy a fusion of flavors with these Tofu Kebabs, served with a sweet chili sauce and fluffy couscous. The tofu is marinated in a blend of spices, then grilled or baked until it has a slightly crispy exterior and a soft, moist interior. It's served with a sweet and spicy chili sauce, adding a burst of flavor to the mild tofu. Accompanied by light and fluffy couscous, this dish is a delightful combination of textures and tastes, perfect for a light lunch or as part of a larger meal.

 

Direction

  • Place couscous in a large bowl and pour in vegetable stock and oil, mix well and cover.
  • Leave the couscous for about 10 minutes until it becomes fluffy.
  • Meanwhile, preheat the oven for medium high heat.
  • Assemble the kebabs alternating tofu cubes and vegetables.
  • Place kebabs on a baking tray wrapped with baking papers.
  • Coat each skewer with oil. Alternatively, spray some oil on the kebabs.
  • Bake for 10 minutes in the oven and brush each skewer with O’Food Gochujang Sweet Chili Sauce.
  • Cook for another 10 minutes, brushing the kebabs with the sweet chili sauce time to time.
  • Mix fluffy couscous with all vegetables and dress it with vinaigrette.
  • Place tofu & vegetable kebabs on a plate and serve with couscous salad.

Ingredients tofu kebab

  • O’Food Gochujang Sweet Chili Sauce 20 ml
  • Firm tofu cubed 6 pieces
  • Courgette cubed 6 pieces
  • Mushroom 6 pieces
  • Cherry tomato 6 pieces
  • Vegetable oil 15 ml or Spray oil

Ingredient couscous salad

  • Instant couscous 70 gr
  • Hot vegetable broth 70 ml
  • Extra virgin olive oil 5 ml
  • Tomato diced 30 gr
  • Basil sliced to taste
  • Roasted bell pepper diced 50 gr
  • Red onion chopped 20 gr

Ingredient vinaigrette

  • Extra virgin olive oil 30 ml
  • Red wine vinegar 15 ml
  • Table salt to taste
  • Lemon zest to taste
  • Fresh mint sliced to taste
