Spicy grilled corn salad with black beans goat cheese and kimchi kick

This vibrant salad combines the sweetness of grilled corn with the creaminess of goat cheese and the heartiness of black beans. The addition of a Kimchi kick, in the form of a spicy dressing or chopped kimchi, adds a tangy and spicy element to the salad. The flavors and textures in this dish come together to create a salad that's both refreshing and satisfying, perfect for a summer barbecue or as a hearty vegetarian meal.

 

Directions

  • Brush corn with oil and season with salt.
  • Grill corn in a preheat grill turning often until evenly charred cook for about 15 minutes.
  • Take out from the grill and allow to cool down.
  • Once cold, cut the corn from the cobs and place with all other ingredients in a large bowl.
  • Season with dressing sauce and sprinkle O’Food Kimchi Kick.
  • Garnish with some salad leaf.

Ingredients for salad

  • Fresh corns shucked and cleaned, 2 pieces
  • Black bean, canned 150 gr
  • Red onion, diced 50 gr
  • Bell pepper, sliced 40 gr
  • Cherry tomato, diced 40 gr
  • Goat cheese, sliced or crumbled 60 gr
  • Extra virgin olive oil to brush corn 10 ml
  • Table salt to taste corn
  • Salad leaf

  • Extra virgin olive oil 20 ml
  • Lemon juice 10 ml
  • Table salt to taste
  • Crushed black pepper to taste
  • O'Food Kimchi Kick to taste
  • (optional) Coriander, chopped
